Romaine Salad With Homemade Blue Cheese Dressing


4-6oz Crumbled Blue Cheese(Roquefort is the best)
1/2 Apple peeled, cored, and diced (Granny Smith is the best)
2-3 Strips smoky bacon cooked crispy and diced
¼ cup extra virgin olive oil
1 tbsp apple cider vinegar
½ tsp Dijon mustard
½ tsp honey
salt and pepper to taste
1 egg yolk
4 large handfuls of rinsed, torn romaine lettuce leaves


  1. Combine Vinegar, Mustard, Honey, Salt and Pepper to taste., Whisk in the oil till it is immulsified
  2. Add Blue Cheese, Bacon, Apple, and Egg Yolk.  Stir thoroughly
  3. Taste and adjust for salt and pepper seasoning
  4.  Toss Romaine Leaves with dressing until thoroughly covered
  5. Serve and thank Gerard
